Herbtastic Raw Chocolate Coconut Bites

These medicine balls are a great snack for when you want a slightly sweet, slightly chocolatey, nutritious boost. It’s a way to feel good about your snacking and sneak some herbs in (for those picky eaters).

Bite Ingredients: 

  • 2 c figs or other dried fruit 
  • 1 c sunflower seeds or other nuts/seeds or nut/seed butters 
  • ½ c molasses or other liquid sweetener (maple syrup, honey) 
  • ½ c shredded coconut 

You can also add other ground herbs for the therapeutic action you’d like it to have, like marshmallow root, slippery elm bark (from a sustainable source), licorice root, cinnamon, ginseng, cocoa or cacao powder.


Dusting Ingredients: 

  • ½ tbsp finely shredded coconut 
  • ½ tbsp ginger powder (or other herbs of choice) 
  • 2 tsp cocoa powder (alkali free
  • 1 tsp (or to taste) ground stevia powder (optional) 


Directions:

  1. Add all bite ingredients to a food processor and run until the pieces are ground and it starts clumping. If it’s too wet, add a little more coconut. If too dry, add a little more sweetener or nut/seed butter or coconut oil. 
  2. Roll the balls to a size of your liking. 
  3. Mix the dusting ingredients and spread out on a plate. 
  4. Roll the balls in the mixture. 
  5. Put balls in an airtight container and refrigerate until ready to eat.

  1. We call them moon balls...helping sustain the vital energy when feeling called to a sweet treat or the moon cycle or sore throat. They really have helped me nourish myself in times when I needed it and so similar to a cake pop that the kids call it cake!
